Dr. Grundy joined UT Southwestern in 1981 as the founding Director of the Center for Human Nutrition, the first of its kind at an American medical school. Through his leadership, the Center became a place where groundbreaking discoveries in nutrition and cardiovascular health flourished, and where education for health professionals and the community thrived.
During his distinguished career, Dr. Grundy mentored more than 100 research fellows and countless young faculty who have gone on to make important contributions of their own. Admired for his generosity and collegial spirit, Dr. Grundy’s influence endures through the Center he built, the scientists he inspired, and the lives his work continues to improve.
